Food Costs
As everyone is
aware, food costs are on the rise
and rising quickly. With fish and
meats reaching all time highs,
many meats and fish are now well
over $20/lb. Cala Lily is
commited to only serving the best
products available.

Whats
New at Cala Lily
Cala Lily has been
remodeling the dining room to
make
your dining experience more
comfortable and esthetically
pleasing. New chairs have been
purchased as well as new
table/napkin colors. New carpet
has also been installed. The room
feels and looks warmer. Other
updates are being considered as
well.

Cooking
with Chef Rivero

Children
and Vegetables
If you have trouble having
your children eat vegetables, try
braising them in a slow cooker
all day with a little meat or
chicken broth and potatoes.
Cook them to a mashable
consistency, puree and blend in
more broth to a gravy
consistency. The potatoes
will serve as the binding starch.
If necessary, thicken it as
you would any gravy. Serve
your "Gravy" over
meatballs, meatloaf, chicken or
steak

Asparagus
Try
grilling Asparagus Spears. Trim
stem, moisten w/ Olive Oil, S
& P. Lightly toast 2sides to
desired tenderness.YUM!
If
your marinated protein browns too
fast,its because of the
acid in the marinade.Bring food
to room temperature (about 20
min.) and lower your cooking heat
it will be more tender and moist.

Ground
Meat
Experiment with ground
meat. Season it up like
your favorite meatballs/meatloaf
or etc., add a touch of curry
then mold it onto water soaked
bamboo skewers. They should
look like a hot dog on a
stick. Bake them, broil
them, sauté them or grill
them. Eat them with
some dipping sauces youve
always wanted to try, or just go
for it and totally
experiment.

Got
Zucchini?
Slice it thin lengthwise; salt it
for several hoursto draw out
moisture. Drain and experiment.
Sliced Stuffed Zucchini Rolls w/
????,
Zucchini Lasagne, Zucchini
Pancakes or Fritters, Grilled for
salad or vegetable. You can grate
it, salt it, drain it, squeeze it
and substitute it for ground meat
in your favorite recipes. Just
let your imagination go, have fun
and by all means laugh at
yourself

Shredded
leftover Turkey makes nice Tacos,
Burritos & Enchiladas. Cut it
up a bit and add it to your
favorite chili
